Shun

Shun knives are made in Seki City, Japan, a center of blade making for more than 700 years. Blades are built around a hard VG-MAX steel core clad in layers of Damascus-patterned stainless steel and ground to a fine 16-degree edge that stays sharp far longer than most Western knives. Handles are moisture-resistant PakkaWood, and Shun offers a free sharpening service for the life of the knife along with a limited lifetime warranty against defects.
