Cast Iron Round Cocotte, 5.5 Quart, Black Matte by Staub
The Buy Me Once Verdict
The other great French enameled Dutch oven, and the one many chefs quietly prefer. Staub's cocotte is cast in Alsace with a black matte enamel inside that behaves a little like seasoned iron: it browns well and hides the stains that show on a pale interior.
Why this should last
Enameled cast iron fails at the enamel, so Staub puts the effort there: the inside is a rough black enamel that resists chipping and never needs seasoning, and the outside is a thick majolica glaze. The lid is heavy and flat with small spikes underneath that drip condensation back onto the food, and the knob is brass or nickel steel, so it goes in a hot oven without melting. No plastic anywhere.
Is it the right one for you?
5.5 quarts is the size for four to six people, bread, braises and most things you would cook low and slow. It is heavy, around twelve pounds with the lid. If you want to see the fond as you cook, a light interior like Le Creuset's is easier to read; if you want a pot that still looks good after ten years of stews, this is it.
The guarantee
Staub's lifetime warranty against manufacturing defects.
